Head pastry chef T.J. Manna makes a croissant that will make your mouth water. It’s crisp and flaky on the outside but warm and gooey on the insides. It’s just what a croissant should be.
Nestled at the west end of Main Street in downtown Starkville is a little slice of heaven called Proof Bakery.
You can find these delicious croissants perched alongside bagels, fresh breads, danishes, truffles, and muffins in the display case.
There are so many amazing pastries and breads, it’s hard to make a choice.

When you open the door to this main street shop, you’ll be greeted by the smell of fresh baked bread and welcomed by the friendly staff.

It’s a warm, quiet spot to spend a quiet morning reading a book and enjoying a pastry, or you can take a seat at one of the outdoor tables and people watch.
How It All Started
You might recognize Manna from other local eateries around town. She started out baking at DeRego’s Bakery, then moved to City Bagel Café, and then on to 929 Coffee.

In 2019, she joined Proof Bakery as head pastry chef and manager.
Proof Bakery was started by owners Robbie and Bonnie Coblentz.
What’s On the Menu
Proof Bakery’s wide variety of delicacies are sure to hit the spot. An ever-changing menu keeps the tasty surprises coming for customers.
You can start the day with a bagel breakfast sandwich and, depending on the day of the week, enjoy a savory personal pizza, a melt, or jambon beurre for lunch.
The bakery offers breakfast until 11 a.m. which is when the lunch menu starts.
If you’re a bagel lover, you can find flavors such as apple gouda, fruit loop, orange sugar cranberry, everything, and, of course, plain, in this local spot. The bagel flavors offered change each week.
Gluten-free and vegan options are also available to customers.

For those with a sweet tooth, you can find coffee cakes dripping with caramel, seasonal cakes, truffles, cookies, macarons, peanut butter cups, and so many more delectable treats.

Proof Bakery is open Tuesday-Saturday from 7:30 a.m. to 2 p.m. and is closed on Sunday and Monday.
